New Board, Long Life: How to Care for Your Sapele Cutting Board

Sapele is a beautiful hardwood, similar in care to maple or cherry, but with its own characteristics. Proper care will help it last for many years while staying safe for food prep.

1. First-Time Care (Before First Use)

New wooden boards usually come dry from the factory, so the first treatment is essential to protect the wood.

Step-by-Step:

1.  Wash gently: Wipe the board with warm water and mild dish soap. Rinse and dry thoroughly.

  1. This removes any dust or residues from manufacturing/packaging.

2.  Apply oil:

  1. Use food-grade mineral oil (or a mineral oil + beeswax blend).
  2. Pour a small amount on the surface and rub it in with a clean cloth, covering all sides and edges.
  3. Let it soak for a few hours or overnight.
  4. Wipe off any excess oil.
    This seals the wood and prevents cracking or warping.

3.  Optional second coat: If the wood looks dry, apply a second thin coat.

2. Routine Use & Cleaning (Including Raw Meat)

  1. After raw meat:
    • Wash with warm water + mild soap, scrub gently.
    • Rinse thoroughly.
    • Optionally, spray or wipe with hypochlorous acid for extra disinfection.
    • Dry immediately and completely with a clean towel or stand upright to air dry.
  2. After other foods:
    • Same as above. For strong odors, rub with coarse salt + lemon.
  3. Avoid soaking or dishwasher: Water is the enemy of wooden boards.

3. Regular Maintenance

  • Oiling: Every 1–2 months, or when the board looks dry. Always use food-safe mineral oil.
  • Waxing (optional): Occasionally use a beeswax + mineral oil blend to strengthen water resistance.
  • Sanding: Minor knife marks are normal; sand lightly with fine-grit paper and re-oil if deep cuts appear.
